THE MILLS
Available in varying material finishes, sizes and styles for grinding pepper and dry spices, salt and coffee, using manual grinding. All mills listed as Pepper mills are made for pepper, but can also grind dry spices. The pepper mills have an all-metal internal grinding mechanism while salt mills have a plastic mechanism given the corrosive effect of salt. The mechanism in each mill may be adjusted for a more course or fine grind by turning a screw at its base.

THE BRASS PEPPER MILL COMPANY
The Brass Pepper Mill company was established in Thessaloniki, Northern Greece, in 1977 by a partnership of mechanical engineers with the aim of producing high quality mills. Current owner, Polivios Loannou, is the son of one of the company founders and has been working in the family business since he was young. The design of the mills is based on a coffee mill created in the early 1900’s for Greek soldiers to use in the field. All mills are manufactured in a single factory/workshop in Thessaloniki. Part handmade and part machine fabricated, each mill is thoroughly quality controlled in this smallscale family business production environment. The mills are produced from high quality materials with a fine detailed finish while being robust and practical for day-to-day use.

CARE
All metals will oxidise (darken) with touch and with use. This patina of use is part of the nature of the metal and brings with it a beautiful patina of use. However, ordinary metal cleaners may be used with a soft cloth to polish the outside of the mill and maintain an as-new, bright polished finish. The mills should never be washed in water as this will corrode the mechanism. Brass mills are slightly more resistant to oxidation. Pepper mills 402, 403, 404, 412, 413 and 414 are lacquered. This laquering provides a barrier to the oxidisation process. No salt mills are lacquered since salt oxidises the lacquer coating.
